Meal Planning: Month of May

Another month, another set of meals to plan!


Each week I try and mix the meals up, but sometimes it really depends on my schedule :)

If I have more time then the meals tend to be a bit more involved.


I try to always mix in a protein, carb, and veggie with every meal :)


WEEK 1:

Monday: Honey Glazed Pork Chops (I seared my chops then baked them after

basting them with the sauce ) Side of Crispy Smashed Potatoes is great!

Tuesday: Cinco De Mayo!! Chicken Tacos and Pico De Gallo

Sparkling Cara Cara Margaritas or Sparkling Margaritas or Raspberry Beer

Margaritas

Wednesday: Simple Carbonara

Thursday: Brown Sugar Spiced Salmon

Friday: Take Out

WEEKEND: Thai Chopped Chicken Salad / Toasted Turkey Hoagie Sandwich /

Buffalo Chicken Wrap

WEEK 2:

Monday: Ground Turkey Quinoa Casserole

Tuesday: Italian Chicken (My family loves this recipe and we eat it a few times a

month- SO easy to make)

Wednesday: Spaghetti Bolognese

Thursday: Stewed Tomato Chicken - Side of brown or white rice and Baked or Fresh

Veggies

Friday: Salmon Patties

WEEKEND: Chicken Pesto Panini / Chopped Salad / Take Out

WEEK 3:

Monday: Country Style Pasta and Bean Soup ( french bread on the side)

Tuesday: Baked Lemon Butter Tilapia

Wednesday: Summer Pasta

Thursday: Green Enchiladas

Friday: Take Out

WEEKEND: Quesadillas / Tuna Salad Sandwich / Shaved Brussel Sprout Salad

WEEK 4:

Monday: Roasted Potatoes and Kielbasa

Tuesday: Lasagna Soup

Wednesday: Picadillo Street Tacos

Thursday: Spaghetti Squash with Bolognese Sauce

Friday: Chicken Marbella (as a small plate) - You MUST have this cookbook in your

collection!

WEEKEND: Beef or Turkey Burgers / Flatbread Pizzas / Take Out

Breakfast: Egg muffins / Loaded Eggs / Protein Waffles or Pancakes and fruit

Lunch: Toasted Turkey Hoagie / Ground Pork Lettuce Wraps / Grilled Burritos

Snacks : Baked Pretzels with mustard or Queso / Sweet & Spicy Nuts
